全麦加上藜麦,就是这里说的双麦吐司,记得前段时间发的【藜麦法棍】,文中分享里藜麦的相关知识,营养非常了得,加上和全麦的搭配,更加诱人。制作方法上,没有采用让人望而生畏的天然酵种法,而是用实用性更强的全麦波兰种来制作,让这款全麦吐司风味十足又有操作性,非常喜欢,感谢来自@王后烘焙 的配方分享。
制作要点:藜麦饭制作的水分需要把握好,不能过于软烂,煮好的米饭室温摊开晾凉再使用,否则会造成面团湿粘,增加操作难度
食谱分享
【主面团材料】
高筋面粉(王后柔风吐司粉) 125g
全麦粉(王后T150全麦粉) 75g
奶粉 10g
糖 25g
速发干酵母 2g
全蛋液 25g
藜麦饭 40g
黄油 20g
盐 4g
牛奶 115g
【全麦波兰种】
全麦粉(王后T150全麦粉) 50g
水 50g
低糖速发干酵母 0.5g
【做法】
1、先做全麦波兰种,低糖酵母加水搅拌溶解后,加入全麦粉搅匀室温发酵1小时左右入冰箱冷藏过夜(状态至少有1倍大)

2、第二天将主面团黄油和藜麦饭以外的材料和全麦酵种一起放入厨师机面包桶搅拌至粗膜,加入软化的黄油,和面至较薄的膜出现(可以参考手工揉面发酵步骤) ,此时加入藜麦饭,慢速搅拌至大致均匀即可,此时面团温度应在26度左右,放入发酵箱进行一次发酵

6、二次发酵至9分满,盖上盖子,或者开盖
